Grilled Goat Salad

4 portions of goat's cheese

4 sprigs of thyme

1 tbsp honey

50 g pecan nuts

1 tsp paprika

3 peaches

1 red onion

1 bag of mixed salad

Method
In a pan, roast the pecan nuts with 1 tsp olive oil and the paprika for 2 to 3 minutes. Allow to cool.
Preheat the grill in the oven. Drizzle the goat's cheese with honey and place a sprig of thyme on top. Place the goat's cheese under the grill for 5 to 10 minutes, or until it is nicely caramelised.
Cut the peaches into wedges and cook them on a griddle in a little olive oil for 1 to 2 minutes on each side. Cut the red onion into half rings. Toss the salad, red onion, peaches and pecan nuts in a bowl. Divide between the plates. Top with the grilled goat's cheese and honey dressing.
Honey Dressing
An ideal balance of sweet and spicy. Delicious with salads containing cheese or smoked meats!
Ingredients: Sunflower oil, honey, vinegar (20%), mustard (vinegar, water, mustard seeds (25%), salt, spices), water, egg yolks (free range), spices, salt.
