Serves 4

  • 1 courgette
  • 1 aubergine
  •  4 beef burgers
  • Olive oil
  • Salt and pepper
  • 1 bag of rocket salad
  • 4 multigrain bread rolls 
  •  Natura truffle mayonnaise

 

Method  

Use a mandolin or peeler to cut the courgette into long strips. Smear with olive oil, season with salt and pepper and cook for 2 minutes on a griddle.

Cut the aubergine into slices. Smear with olive oil, season with salt and pepper and cook for 3 minutes on the griddle.

Cook the burgers on the griddle for 3 minutes on each side. Cut the bread rolls in half and toast or grill the inside until crisp.

Spoon a little truffle mayonnaise onto the lower half of the bread roll, top with rocket, a burger, a few slices of courgette and aubergine. Add a little more truffle mayonnaise and top with the other half of the bread roll.
